Corn Silky String Soup

Corn Silky String Soup

I found out that you can eat the silky strings of corn and decided to try using them like harusame noodles. In all honesty, they didn't really turn out like harusame noodles at all but I did like their crisp texture. Corn is often used as a diuretic and the silky strings can be found in all sorts of Chinese medicine so please give them a try. You can use the silky strings in tea but I also like using them as vegetables. Throwing them away is such a waste. By the way, it's a bit strange but this soup doesn't even taste anything like corn. If you’re like me, If you use corn tortillas for anything, you always seem to have so many left over and never get around to using them all. This is a great recipe to use some of them and is very simple to make. The original recipe called for cooking your own boneless skinless chicken breasts but I went an easier route with frozen pre cooked chicken. I also added a can of sweet corn. So feel free to customize to your own liking. This recipe feeds a lot of people or leaves plenty leftovers;-)
