I have three sons (9,7,and 2) and a daughter (1).I try to have dinner ready to eat by the time my husband comes home, but that doesn't always work. So my sister-in-law sent me this recipe because it's very easy and quick to make. We love it and I change the salsa and add diced onions and/or diced bell peppers at times. I always double the recipe and make two pans. Hope you enjoy! ! 😄

What can I say about enchiladas? They have always been one of my favorite foods that Mexican restaurants never get right. They will ALWAYS be better at home, because we take no short cuts. Enchiladas are not a casserole, must be prepared with passion and respect for the old ways. With the right sauce enchiladas are perfect with just cheese and nothing else.
