Been Can Roasted Chicken

Been Can Roasted Chicken

My hubby usually brings back few cans of beer from his office during chinese new year but we don't usually drink beer. So the beers are just sitting there in my kitchen cabinet. One day, someone posted in facebook that he roasted the chicken with beer. So I decided to try it out and wow... We LOVE it. The meat is super tender, juicy, the skin is crispy and the seasoning is just perfect. The roasted veggies are also very yummy. My youngest son even finished all the purple sweet potatoes (He dont usually like purple sweet potatoes). The kids love it, hubby loves it. This recipe will be used over and over again! In this recipe, I used tiger white beer (the one I had at home). Next time will probably use other type of beer. Not very sure whether the different type of beer will give different flavour to the roasted chicken, some people says it doesnt really matter. But will give it a try next time. Salsa I

Salsa I

This was my first attempt at home-made salsa. I made this about two weeks ago with fresh peppers from the garden. Most of these quantities are after the fact approximations; at the time I was just using whatever I had on hand without measuring most of it.
