I was trying to find something cheap, filling and easy to fix. So, I threw this together. They were delicious! It only cost $11 for all of the ingredients!

  2. 1 can black beans-drained
  3. 1 can rotel tomatoes-drained
  4. 2 can cooked chunk chicken
  5. 1 envelope fajita seasoning
  6. 1 packages 8 inch Flour Tortillas
  7. 1 packages shredded cheese(8oz)of your choice. I used Mexican blend
  8. 1 jar of salsa
  9. 1 container sour cream

Steps to make a Chicken, Corn & Black Bean Quesadillas

Mix first 5 ingredients in a bowl.

Scoop and spread 2 spoons of mix onto half of tortilla. Sprinkle with cheese and fold other half over.

Spray large skillet with cooking spray. (I fit 3 in skillet). Cook on medium heat for 3 to 4 minutes. With a wide spatula (put open side of quesadilla to the inside of spatula) flip and cook for 3 to 4 more minutes.

Gently transfer to serving platter. This made 10 quesadillas. Serve with salsa and sour cream.

We get awesome local corn from the local farmers market during the summer, the best way to preserve the fresh flavor is to blanch the corn and cut the kernals off the cob and freeze. I have tryed freezing whole ears but was not happy with the reheating. To reheat these just pour into a dish, add salt, pepper and butter and microwave until hot, or saute in butter until hot,. It is so delicious a touch of summer all year long!
