My baby boy wanted an apple cake for his birthday, and cardamom is more suitable for his low-histamine diet than cinnamon, so voilà! It is a pleasant autumn flavor that nods to the season almost upon us. The dense cake is full of juicy apple chunks and it is so enjoyable to eat warm with the sweet maple cream icing mixing with the vanilla frozen dessert. As for the decorations....my 4 year old wanted a space theme (obviously) but rejected the number 4 for a 100 atop his cake because that is his favorite number. My husband pointed out, however, that 100 still represents the number 4 in binary language. So, it works, I guess 😳! Tip: If you want the cake to retain the softness it comes out the oven with, seal in the moisture by covering every inch of it in the maple cream icing and leave at room temperature on the day of serving at a party. Since we are following a low histamine diet for health reasons, we throw the cake (what is left after immediately eating) into the freezer and nuke it in the microwave for 30 seconds when we want another serving.
