White Chicken Chili

White Chicken Chili

A friend shared this recipe with me years ago and it is a hit whenever I make it. It's harty, spicy & everything you will want in a chili! The longer it cooks, the spicier it gets. I can't get enough of it in the Winter <3 I hope you like it too!

Maque Choux (pronounced mock-shoe)

This is a throwback to my Cajun upbringing. My mom is from southern Louisiana, a town called Church Point. Deep in Cajun territory. This is a very old recipe and something I ate often. I’m making it this year for our Thanksgiving dinner and wondering why we haven’t done it sooner. We always wait all year for rice dressing but maque shoux kinda got shoved to the back. I’m bringin’ it back!!!! It’s so worth trying and goes very well with my smothered chicken recipe. This recipe is for a crowd. You can make much less if necessary. #mycookbook

Baby corns are a low carb and nutrition dense food that are packed with fibers, vitamins and some protein. A good way to enjoy them is to simply coat them with BBQ sauce and air fry, and you can have this delectable veggie dish on the table in no time.

Spatchcocked roast chicken, cous cous and Mexican corn

Spatchcocked roast chicken, cous cous and Mexican corn

As Beyoncé Etta James once sang, At Last. At long last, I can use the word spatchcock. Spatchcocking the chicken cuts down on the cooking time, and offers linguistic joy! An old friend of mine used to make compilations of ska punk cover versions, called Spatchcock (vol.1, 2 etc.). I hope that this meal lives up to the genius that is I Fell Asleep on My Arm by the Aquabats. The chicken is simple but full of flavour. Using the pan juices to cook the cous cous adds all the colour and flavour you could hope for. The simplicity if these parts allows you to have some fun with corn on the cob, rather than just contenting yourself with slathering butter on it. I first had corn like this from Eat Drink Love Taco in St Kilda, Australia. On the off chance you’re near there, please get a steak and chorizo burrito and tell me how it was. If I could get it shipped 10000 miles to me, I would. Tex Mex heaven.

No Kneading Required!! Corn Kernel Bread

No Kneading Required!! Corn Kernel Bread

I'm really into no-knead bread. You can make this without kneading, so it requires very little effort!! Just bring the dough together roughly. Press the air out of the plastic bag properly to prevent the dough from drying out. When rounding off the dough, don't fiddle around with it too much and work quickly. Drain the corn kernels very well, or the dough will become soggy. Mist the surface to make the crust very crispy. Recipe by Ro-zuminto
