Cajun Salmon w Saccotash. I’m not really a fish eater, but this salmon dish was taught to me by Gordon Ramsey I don’t think mine is as good as his but it’s I tried I started with taking the salmon and then bending it then giving it 3 slits so that I get a crispy skin and then making sure my pan is nice and hot before I put my oil then put my salmon in actually my first time to cook salmon so you can tell when it’s time to flip the color will change from pink to white then flip then I added some fresh thyme and garlic to base tarragon would work as well. For the succotash I used red onion, minced garlic, green, red bell peppers, corn, zucchini , yellow squash, cilantro and lemon juice. This how it come out

Egg-free Cornmeal Cookies

Egg-free Cornmeal Cookies

I wanted to make a healthy snack made with cornmeal, so after many attempts, I came up with this. They also come out great if made with vegetable oil. If using vegetable oil, 10 g will give you a biscuit-type cookie and 20 g will give you more of a cookie texture. (adjust the amount of milk depending on how much oil you use.) Gradually add in the milk while keeping an eye on the dough. I think the amount of flour needed will differ depending on the brand. If the dough becomes too loose, use cornmeal to dust the dough with while rolling it out. Recipe by Minimame

Braised Ham Hock and Vegetables

There are many braised dishes similar to this one. One in particular uses fish and soy sauce but with a different cut of pork. When I have ham hocks, I usually make dry beans. But I wanted something different today. I changed the flavor profiles and used different vegetables to achieve a more subtle tasting dish. This can be eaten by itself or served with rice or egg noodles. Also, some people call the fat and impurities when you boil something “drugs”. That is what I am referring to when I use that term, for those of you who haven’t heard it before.
