Canadian bacon: cut 6 pound pork loin in half. Boil 2 quarts water with 10 peppercorns, 3 bay leaves, tsp star anise, tsp coriander, 6 Tbs salt, 3 Tbs brown sugar, 6 tsp nitrate salt.
