Veggie taco
Okay so I recently saw the forks over knives documentary and I've been motivated to change the way I eat. I absolutely love meat and giving it up is a challenge so I've decided to eat meat sparingly and use it as flavouring and eat more whole plant foods. I have one of Dr. Campbell's books: Whole: Rethinking the science of nutrition and his sons book the Campbell plan. I plan on reading the china study next. So here it goes.

Cheesy Mexi-Quinoa Bake
We had a big family bbq over the weekend and I had left over grilled corn on Cobbs, sliced green poblano and cherry tomatoes from a veggie tray I had out. Inspired me to make this Mexi, Santa Fe, taco thingy quinoa bake. It was delish! Enjoy! (I wish I had black beans,that would have been a great addition)
Mexican Beef, Lime & Tortilla Soup
Found this in 'Marvellous Mince' book by Simon & Alison Holst. This is my spin. Not a bad soup- might throw some chopped chilli next time for some added kick- enjoy!

This dish was somewhat of an experiment, blending 2 different recipes into one. Happily, it turned out so well, my husband said it tasted like a restaurant dish. :) Success!
Iz's Vegan Hoe Cakes
