  8. 1 tbsp sugar add more to taste
  9. 1/3 cup chopped cilantro
  10. 2 limes zested. and juiced
  11. 1 salt to taste
  12. 1 tbsp coconut oil

Saute carrot with oil 5 minutes

Add mushrooms saute for 3 minutes, add baby corn.

Add broth, red curry paste, sugar,lime juice and zest. Bring to a boil. Turn heat down, simmer for 20 minutes.

Add coconut milk, shrimp, bring back to a boil, add cilantro, stir and turn off heat, put a lid on it. Wait 5 minutes. The shrimp will be perfect. Enjoy!

Trying this with steak for the first time, and it is so easy, and so much flavor gets added to the steak, and it's perfectly done. When the steak had been in for it's one hour, the wife said she was busy. It was 40 minutes later before she was ready to eat, and the steak removed from the water bath. The steak was still perfectly done even after 1 hour and 40 minutes. How convenient is that. So a quick sear later, and we had a perfect, extremely flavorful steak. It still surprises me how me how much flavor is imparted to the meat using this method. Using minced (as opposed to powdered) onion or garlic, is just perfect. Plus the extra short time to prepare the corn-on-the-cob made using the Instant Pot a win for this dinner.
