  25. 1 cheddar cheese
  26. 1 scallion

Steps to make a Vegetarian Chili

Preheat oven to 500. Chop All Veggies, Mince Garlic.

Place Jalapeños in oven safe dish and drizzle with oil. Put in Oven for 15 minutes. Once roasted, dice (remove the seeds if you want less heat) and save for later.

Put a large pot (5 Quart) on med high heat. Add oil. Add the sweet potatoes, onion, and peppers. Sweat for 5 minutes.

Add mushrooms, jalapeños & garlic. Cook 2 minutes

Add all cans and spices. Stir and cook 2 minutes.

Add remaining ingredients. Bring to a boil. Turn down heat to med-low and simmer until thick. 45 minutes minimum.
