Woohoo! Popcorn! Who doesn’t love popcorn?! Popcorn is a perfect quick and easy snack! Firstly though, if you buy popcorn instead of make it at home... NEVER BUY BOY SCOUT POPCORN!!! It’s cheap junk. I buy Popsecret homestyle popcorn for when I’m feeling lazy and don’t want to make it. But give it a go and try it homemade! (My cat, Quora loved it)

Mike's Kids Winner Winner BBQ Dinner!

Mike's Kids Winner Winner BBQ Dinner!

Since we, as Chefs are all well aware of the stress we experience daily with the culinary demands of others, I regularly test my young students with hectic, timed cooking challenges. Fellow Chefs? Tonight they nailed it! And, once again, all met each of their deadlines. Anyway, it's almost Summer AND it's the weekend, so it's BBQ night here in the O'Brien Shire! With that, my 7 year old students were charged with cooking their parents a complete BBQ poolside dinner. All to be completed within an hour. BBQ Chicken, BBQ Baked Beans, Sweet Buttered Corn and chilly, fresh side salads were all on the roster! This recipe was one of my favorites. It's such an easy, affordable and delicious taste of a simple Southern Summer BBQ supper! All were BBQ'd, mixed, chopped, documented, presented and photographed by a tiny, adventurous, creative little 7 year old lassie named Lacy. However, one of my favorite baked bean recipes tonight included precooked shredded pork. But, bacon, side pork and pork fat works great in any baked bean dish! [she's so cute! check her out! snapping pictures of literally everything she's cooking! adorable!]

You can also enjoy this dish with thick slices of toasted garlic bread. Just pile your chicken sauce on the top of it and eat it by hand. Use low sodium broth if you prefer your dishes a little less salty. Know that as this sauce reduces, the salt flavor will indeed enhance itself. But, we do adore that slightly salty touch! Serve with Green Tabasco.

Mike's New Orleans Old School Seafood Gumbo

Mike's New Orleans Old School Seafood Gumbo

It's about time to put some old South in your mouth isn't it?! If so, this recipe includes piles upon piles of extra spicy, chunky, delicious, juicy seafood and scrumptious smoky Andouille sausage! No Okra is added to this Gumbo. Why? Because Okra is slimy, gross and terribly, terribly icky! Nope! Not gonna happen in my kitchen! Yuck! Just yuck! In fact, double yuck! Sorry for the rant. It's my ONE culinary pet peeve. This is why the Roux and Gumbo Filet Powder are so important in this dish. Like Okra, they're both thickeners. Just much, much tastier! Anyway, on a happier note, your roux can be made as thick or thin as you desire. Half it by more if you'd like. Thinner? Served with an absorbent jalapeño corn bread. Just the way we enjoy it. Or, thicker? Served with a big assed spoon and a healthy shake or two of Tabasco or Louisiana Hot Sauce! Be sure to serve this dish with a dash of additional Tony Chachere's Creole Seafood Seasonings to the side for your guests. Fresh French Bread and chilly Egg Potato Salad are also great as Gumbo sides! My 7 and 8 year old students had a blast making this messy, albeit, detailed dish this evening while jumping in and out of the pool and hot tub! I hope you will as well. Try making this tasty little dish as a family. After all, kids really do love cooking with mom and dad! Talk about some quality family time! Shreaded chicken and white rice goes great in this dish as well. So, feel free to get creative with this flexible recipe!

Hushpuppies with Creamy Cheese Centers

Hushpuppies with Creamy Cheese Centers

These cheese filled hushpuppies came about after my husband returned from a buisness trip to New Orleans and had hushpuppies stuffed with cheese. He loved the creamy cheese centers. These are simple to prepare but time consuming to fry. You can not crowd the pan or the cheese can leak out with the lowering of the oil. If cooked in very small batches they turn golden in minutes and can be set to drain on a wire rack over a foil lined baking oan. Then all fryed hushpuppies reheated just until hot for a crispy, slightly spicy crust with a melting creamy center!
