I bought English muffins from the store and noticed they had a nice chewy texture. I noticed that it had rice flour in it, so I tried to copy it at home. These rice flour English muffins are better than store-bought. Sandwich with whatever ingredients you like. The hand-made molds don't need to be oiled, and will slide off the baked bread easily. I revived a recipe I learned a long time ago at a cooking class. You can omit the peeled shrimp, but please make sure to use canned scallops, even cheap ones. The filling comes together well without a binder like katakuriko potato starch flour. Japanese leek is much better than regular onion in this too. Just combine all the ingredients and mix together. They'll be fighting over these, so make a lot! Everyone can easily eat at least 10 of these. They are so different from the store bought ones! Homemade shumai are the best by far! I thought keema curry was hard to make, but I was able to make this version easily using store-bought curry roux. The longer you simmer the curry, the more balanced the flavor will become. Take care not to let it burn by watching the heat and stirring it, and cook patiently to reduce the sauce. If you don't have canned tomatoes, use 3 fresh tomatoes instead. For 4 servings. I used to make this curry a lot when I was in high school. I made it using lots of the spinach my grandfather grew. My family all loved it, especially grandpa. It's a curry that brings up lots of happy memories for me. Blanch the spinach in boiling water with a little salt added for about 10 seconds, to get rid of the oxalic acid. If you slice the onion thinly (about 2mm thick) and cook it well in Step 2, you don't need to simmer it. You can use pork instead of the bacon. Recipe by rie-tin
