Japanese Tabbouleh with Mixed Grains

Japanese Tabbouleh with Mixed Grains

I had a lot of millet which was originally for cooking with rice. I cooked the millet and I thought it looked just like cous cous. I made a marinade and checked the taste. When marinated, it was exactly like tabbouleh! The salad is very tasty already with lemon juice and olive oil, but I added a little soy sauce. Cooking time of mixed grains: Kibi-mochi for 5 minutes, amaranth for 8 minutes and quinoa for 10 minutes. You can freeze the leftovers. Check the taste before serving. Adjust with herb salt or plain salt. If you don't have a cake ring, put the salad in a small bowl. Recipe by kebeibiko

Our Family's Light and Refreshing Coleslaw

I saw the original recipe in a cooking magazine, and then changed and adapted it to make the kind of refreshing, sour salad that I like. The cabbage will reduce in volume, so you can eat quite a lot of it! In order to enjoy the texture of the cabbage, cut it into rather thick julienne instead of shredding it very finely. Remember that the vegetables are already salted when seasoning the dressing. For 2-3 servings. Recipe by cureo

Our Family's Homemade Ramen

I'm really into homemade noodles, since you can make them without any kansui (alkaline soda water). I like crinkled Chinese noodles, so I turned them into ramen. You can enjoy this in so many ways just by changing up the soup. To save some time and effort, and because there are so many delicious ones out there, I just store-bought soup. Soy sauce based soup has the least calories, so I recommend it for light tasting ramen. Recipe by 320coco

Crispy and Chewy Rice Flour Pizza for Vegetarians

Crispy and Chewy Rice Flour Pizza for Vegetarians

I wanted to try making a vegetarian pizza with sake lees cheese. It won't upset your stomach no matter how much you eat. This recipe is also good for those with egg, dairy, and wheat allergies as the pizza contains none of these ingredients. This time I used 100% rice flour so the crust is very pale. However, if you use special rice flour for sweets or bread, then the crust should come out a nicer colour. My pizza sauce recipe yields quite a lot, so you can store the excess in a jar in the refrigerator. The photo for step 5 is a pizza topped with nut cheese, sake lees cheese and tofu mayo.
