I wanted to make something filling using bland mizuna leaves, and I came up with this pizza-style chijimi dish. My husband told me it was delicious, so I uploaded the recipe. The key is to cut the mizuna leaves in short lengths. I used 2 large handfuls of mizuna after being cut. If you use too much, they won't dissolve well into the batter. The nice fragrance of the cheese and wiener sausages is a key characteristic of this recipe. Please press the chijimi down while shallow-frying so that it gets nice and crispy. Recipe by Yu-hi

Browned Corn with Butter and Soy Sauce

Browned Corn with Butter and Soy Sauce

I've always loved corn, but there are times when I'm hit by sudden cravings for butter and soy sauce. Try not to scorch the kernels, but cook them until some of the corn browns, as seen in the main photo. I used pre-sliced butter (1 slice = 8 g). Adjust how much you brown the corn or the amount used to suit your tastes. Recipe by Ramune iRo

Cornmeal Waffles

I am very lucky to live by a place that grinds fresh cornmeal, buckwheat and flour. If you cannot get cornmeal fresh, you can use regular cornmeal. This is not a heavy waffle. It is light and crisp. It is not too "gritty" because of the cornmeal. This is an old family recipe.

This stated with a recipe from Cooking Light. I keep adjusting. One trick I use is cooking a layer at a time, adding seasoning for each new layer, based on the ingredients of that level. By doing this, the individual ingredients have their own flavors.
