There are many braised dishes similar to this one. One in particular uses fish and soy sauce but with a different cut of pork. When I have ham hocks, I usually make dry beans. But I wanted something different today. I changed the flavor profiles and used different vegetables to achieve a more subtle tasting dish. This can be eaten by itself or served with rice or egg noodles. Also, some people call the fat and impurities when you boil something “drugs”. Trivia: Ube halaya or halayang ube is a Philippine dessert made from boiled and mashed purple yam. Good Shepherds in Baguio, Northern Luzon part of the Philippines, makes the best Ube Halaya! You can use it for pastries and cake flavours. This is my first time to do frosting and rosette swirls :). some wants the custard on top of the cake, but in this recipe I want to make use of the Ube Halaya as frosting so I put the custard sandwiched between the cake 😊. used hand whiskers here. (Took me 30 minutes to come up with sturdy peaks 😜) #purpleyamcake #ubehalaya #filipinofoodseries #asiancuisine
