Cornbread Casserole
There was this Italian Restaurant in Lower Manhattan that made great Polenta over Sausage and Peppers. I love polenta, but you have to stir it a lot to make. I decided to try a short cut and came up with this idea. Not as creamy as that old restaurant, but still very good. Another crowd favorite in my large and picky family. Basically, this can be made with any meat and vegetable combination. In the future, I plan on making it over Chicken & Broccoli. So far, I have made it over Chicken & Peppers and Sausage & Peppers(Twice). For the picture, I made it over Sausage &Peppers. I hope that you enjoy it as much as I did. The only negative to this dish is when it is over. :-( Enjoy!
