Mexican Lasagna
This is a Mexican take on lasagna. Corn tortillas stand in for the pasta. It's a quick layering of seasoned beef with lots of melted cheese for a sputhwestern flavor.

Sweet and Sour Pork
This is an old recipe of mine for sweet and sour pork that I updated by stir frying the pork instead of battering and deep frying it. It makes it a quick one pan meal and we liked the fresher taste of the pork. Chicken and shrimp can be used as well.
Day Before Payday Shephards Pie
I don't like using boxed mashed potatoes, but it's the day before pay day dang it! Side note: I MAY have over cheesed the one in the picture, but it's oh so good!
