I threw this together last minute because I was on a budget and needed to make dinner with what I had in my cabinet....this is what came out! :) it was delicious! I have made it a couple more times since and tweaked it a little by adding a little chopped jalapeño and using tortillas to make burritos and it is delicious and so easy!   1. 1 lb Ground Beef
  2. 1 chopped onion
  3. 1 cup Brown Rice (cooked)
  4. 1 can Corn
  5. 1 can Pinto Beans
  6. 1 can Diced Tomatoes
  7. 1/4 stick Velveeta Cheese

Steps to make a El Paso Skillet

Brown your ground beef and scramble with the onions.

Once meat is done add 1 can of pinto beans and 1 can of diced tomatoes . Don't drain the beans but be sure to drain the tomatoes.

Once heated evenly on medium heat, add the corn and the brown rice once it has been cooked.

Last, once everything is evenly heated, add the Velveeta cheese. Be sure to slice the cheese into about 1/2 inch cubes, then cover skillet and simmer for about 10 mins or until the cheese is melted and can be stirred into the mix.
