  3. 1 cup water
  4. 1/2 tsp salt
  5. 1 cup yellow corn grits, uncooked
  6. Shrimp
  7. 1 medium red pepper, julienned
  8. 1 medium yellow pepper, julienned

  10. 2 clove garlic, sliced
  11. 1/2 lb smoked sausage, diced
  12. 6 slice bacon, uncooked, chopped

  14. 1 lb shrimp, deveined, shelled
  15. 1/2 tsp black pepper
  16. 1/2 tsp cayenne pepper
  17. 1 tsp chili paste
  18. 1/2 cup white wine
  19. Garnish
  20. 1/4 cup flat parsley, chopped
  21. 2 stick scallions, sliced

Steps to make a spicy shrimp and grits

Cook sausage in water on medium high heat in a sautee pan, covered. Once the water is evaporated, remove cover and brown for 2 minutes. Remove from pan and set aside.

In same pan add bacon. Cook until all bacon fat is rendered. Remove bacon from pan and set aside. Keep grease in pan.

Add peppers, shallots and garlic. Sautee for a few minutes. Add seasonings and chili paste. Cook another minute.

Add shrimp and cook until they turn pink. About 2 minutes. Add wine and then deglaze. Add sausage and bacon back to pan. Cook for another minute or two.

Meanwhile, bring water and cream to a boil. Add salt and stir in grits. Cover and turn heat down to low. Cook grits for about five minutes or until done. Perhaps stir once in between the time to prevent lumps.

Serve the shrimp on top of the grits with the garnish on the very top. Enjoy!

This is an adaptation of inari sushi that were packed in a bento I got from a ryoutei (high-end Japanese restaurant). These are seven-color inari sushi featuring purple, sticky and beautiful black rice. The seven colors are: Black rice (black and purple); shirasuboshi (white, boiled salted tiny sardines); carrots (orange); corn kernels (yellow); sesame seeds (gold); and edamame (green).
