in the same bowl add reserved chicken broth 2 cups of shredded jack cheese, cottage cheese, olives, onion and green chiles

add oil to a small frying pan and heat on medium. in a large frying pan add enchilada sauce and heat on low

once oil is hot place a corn tortilla in hot oil for just a second to soften it then immediately after put the tortilla in the enchilada sauce. continue on with about 8 tortillas lining them in a 13 1/2 x 9 inch pan overlaping slightly to fit and ladle on extra sauce

once a solid layer has been made scoop 1/2 of chicken mixture on top

continue with another layer of tortillas in enchilada sauce. then repeat with remaining chicken mix. ladle on extra sauce with each layer

after the last layer of tortillas is placed on top ladle more suace and add remaining cup of shredded cheese

cover with aluminum foil and cook in a 350°F oven for 45 minutes

let rest for 10 to 15 minutes and cut into squares. serve with cut tomatoes shredded lettuce and sour cream
