Cook over med heat without sturring until egg starts to set underneath and around edges. With spatula lift and fold for uncooked to flow underneath. Cook until set, but still moist. Set aside on plate.

Place 1 bacon piece on each muffin. Bake 15 to 17 min until lightly brown. Insert toothpick in center until clean. Cool in pan on rack. Use table knife to loosen edges. Serve with syrup if desired. Makes 12 muffins.
