Everyone in the South, Central areas of America, and various other places, have their version. The origin is from Native Americans. They originally made thick batters and formed it in their hands. Then they would deep fry in animal fat, steam in green corn husk, or boil them. Some even cooked them dry and hard for trips to take and eat. There is many versions of this some use hot water mixed with the dough, buttermilk, milk, or any numerous ways and ingredients. This is why I call this my version. I have 3 options in the method of cooking this one is nonstick spray, fry in oil, and a very large diameter cake. I just hope if you give it a try that you enjoy!! I am very thankful for the Native American People for their contributions that they hardly get credit for. They even invented popcorn!!!

Cheesy Chorizo Rice

Cheesy Chorizo Rice

Ninja Foodi dinner, but would work the same with most any pressure cooker. What I like about this recipe is it was quick, easy, filling, inexpensive, and made a whole meal with just one pot. This was a total experiment. I ended up just tossing together some things I'the hoped would work and figured pizza is always just a phone call away if I failed. 😂 My husband loved this, so I made sure to record it to be able to recreate it for him. That being said, this is not by any means how a traditional chorizo dish would be prepared, and I apologize in advance to any Mexican food connoisseurs out there. You will more likely than not want to add some jalepeños and/or red pepper flakes and cayenne to turn up the heat if that's your thing. This should also work just fine with ground beef instead of chorizo (double the spices), Rotel tomatoes instead of Italian tomatoes (likely would work better), condensed cheddar soup or your own cheese sauce from shredded cheddar butter and milk melted together instead of the Ragu cheese sauce, black beans instead of blàckeye peas, brown rice instead of white rice. ....or just use it as a base to spark ideas for your own experiment with whatever you have on hand.

Mexican Rubbed Steak w/ Chorizo Potatoes & Mango Habanero Salsa

Mexican Rubbed Steak w/ Chorizo Potatoes & Mango Habanero Salsa

My family and I are huge steak lovers and we are lovers of Mexican cuisine. So we have tried to meld 2 of our loves together with this Mexican Steak dish. The steak has a Mexican rub with a few more aromatics added to it. It is cooked like a fine dining steak with the butter basting with a few different herbs and spices added to kick up the Mexican flavor of the dish. I added 2 sauces: mango habanero and a chili sauce, and it has chorizo potatoes, chili corn, and a jicama & fennel slaw for the sides. There is a lot of things going on in the plate so the ingredients and steps are quite a bit but the taste makes it all worth it at the end.

This is a Chinese Sichuan(Szechuan) recipe. Broad bean chili oil sauce is the key for most Sichuan cooking. I recommend you to buy this sauce that is made in Pixian town, Sichuan, China. To make this dish successfully, you need to use fatty beef. The beef short ribs normally used for BBQ fits this recipe.
