My boy loves maple syrup, but not that it is sticky! These have enough maple in them to satisfy his sweet tooth, and allow him to walk around with them. He calls them maple “cookies.” They are soft, sweet and have a satisfying chew. I was inspired to create this after reading chocolatecoveredkatie.com’s pancake recipe.

Almost Like Store BoughtEnglish Muffins

Almost Like Store BoughtEnglish Muffins

I bought English muffins from the store and noticed they had a nice chewy texture. I noticed that it had rice flour in it, so I tried to copy it at home. These rice flour English muffins are better than store-bought. Sandwich with whatever ingredients you like. The hand-made molds don't need to be oiled, and will slide off the baked bread easily. The molds can also be used many times so they're economical as well. For 6 muffins (9 cm [3.5 in] size molds). Recipe by Ruka

Freshly Baked Savory Stuffed Rolls in the Morning

Freshly Baked Savory Stuffed Rolls in the Morning

I wondered if I could keep the dough in the refrigerator overnight to make freshly baked bread in the morning without having to knead the dough from scratch in the morning too. Dough I made Thursday morning still baked up beautifully on Saturday morning. The dough I used is a recipe I saw in a cooking magazine a long time ago and is not so sweet. It's not sticky, and has lots of yeast in it, so it rises readily and is easy to handle even for beginners. At the moment I can guarantee that this dough can be made 2 days in advance and kept in the refrigerator. Leave it up to the bread machine to make the dough. ♪ Even if you hand knead it, it will be nice and smooth after 5 to 10 minutes of kneading. You must preheat the oven properly! If the oven is not hot enough the dough may not rise, so please preheat it well enough in advance. This is a fluffy light dough that can be used for savory or sweet stuffed rolls. When refrigerating the dough, I found out that if you form the rolls and use the "partial freezing" function (if your refrigerator has one), the dough doesn't get frozen hard or overproof, and the rolls turn out just right! Please try it out for yourself. Recipe by Pokuchan

Healthy and Chewy Okara Dumplings

Healthy and Chewy Okara Dumplings

I wanted a side dish using okara, since it's so nutritious, so I came up with this recipe, which is actually my variation of a recipe I found in a cookbook! These dumplings are healthy because they're also packed with veggies and mushrooms. Once the dumplings get cold, make sure to heat them up before serving! Microwaving them before heating them briefly in the frying pan gives them a freshly baked taste. They're also amazing heated with some cheese and mayonnaise on top! They can be stored in the freezer, so make a ton! I use pre-made dashi soy sauce that I buy at the store. Recipe by saassa
