Green chicken enchilada casserole

You can use whatever part of the chicken you prefer, I used legs and thighs because I prefer dark meat. Plus that's what I had on hand, I would not recommend using all white meat it tends to dry out. The only reason I call it casserole is because sometimes I am too lazy to go through all the trouble of rolling each individual enchilada.😁 this is definitely a labor of love this is not something you could whip up quick but its worth it.! Hope you enjoy!!
