Mexican Chicken Chili
This is an amazingly easy recipe to throw together for a regular meal. Our family made it a lot when we were camping in a crockpot. Super easy to put together and also very yummy. We complemented ours with cornbread too. Delish!

Cou-cou and flying fish
Cou-cou and flying fish is the National dish of Barbados. Coucou was originally brought by Africans during slavery and is of similar texture to grits. The cornmeal and okra form together to make a savoury porridge-like meal. The flying fish has small pectoral fins, almost winglike, that enable them to glide along the sea surface . The flying fish was mainly found in the waters of Barbados but because of climate change, the majority of the flying fish have migrated to Toboggan waters
