In honor of the Lego movie we have adopted the tradition of cooking Tacos every tuesday. We make several variations which are discussed below, but the chicken tacos are our favourite

Ingredients and spices that need to be prepared to make Chicken tacos:

  2. 3 Tbsp olive oil
  3. 1 cup tomato sauce
  4. 1 (15 ounce) can of diced tomatoes
  5. 1 Tbsp chilli powder
  6. 2 tsp paprika
  7. 1 tsp salt
  8. 1 tsp cumin
  9. 1 tsp garlic powder
  10. 1/2 cup water
  11. As needed Corn tortillas
  12. Some Cabbage salsa
  13. 1/2 cabbage
  14. 1/4 bunch cilantro
  15. 1 lime
  16. 3 Tbsp mayonnaise
  17. 1 large clove of garlic chopped and mashed with
  18. 1 tsp salt until creamy

Steps to make a Chicken tacos

Boil the chicken in salted water until it pulls apart with a fork. I use a frozen whole chicken or frozen chicken breasts and boil them in water the covers them for 1.5 hours. OR now that I have an instapot I cook them under pressure for 1 hour, this uses much less water. (make sure to cook those bones down for soup later)

Take chicken out of the water and allow to cool until you can handle it. Then using two forks, or your hands, shred the chicken.

Heat oil in a large frying pan and add all of the incredients and cook until well combined. Adjust seasonings to taste.

To prepare the corn torialls, wrap in a wet papertowel and microwave for 1:30 or unil they are all soft and a little curley.

Serve with cabbage salsa. Make sure to mash the garlic, it really helps spread out the flavour.
