Ok folks... this is a sneak peak into the life of a full-time mom, wife, nurse, farmer, homesteader, entrepreneur, adventurer, crafter, DIYer, maker, and doer. I do my best to save ONE day at home for our tried and trusted weekly meal-prep slam where I clean out our fridge and take stock on how our nutrition can help fuel our busy week ahead. I am a mom of a 13-year old growing boy and our 3-year old daughter. WE. KNOW. BUSY! Because I work outside the home as an Emergency Room Nurse, I try to plan ahead on my days off to ensure all is well on the homestead. Having a good, fresh spice rack and a few essentials on hand, (such as some homemade bone broth), can turn your fridge full of partial ingredients into a culmination of savory deliciousness in minutes!

Healthy Lettuce Salad with Homemade Dressing

Made this lettuce salad with my homemade dressing. Personally I don’t really like to use groceries salad dressing for my homemade salad. In my opinion homemade dressing is fresher and healthier. this recipe I used my leftover corn salsa, and some chopped cilantro, and black bean, because I really don’t want to wasted. Anyway you can used the fresh or canned corn. So here is my recipe. I did post this recipe on YouTube. So you guys can check it out on YouTube.

Sheet pan shrimp boil

This year for Christmas I wanted to do something completely different, just tired of the same thing over Thanksgiving foods that take forever to cook and left with tons of leftovers I don’t know what to do with. I wanted more time with my family enjoying Christmas and less clean up and food I know my family will actually freaking eat.I grow up with the traditional Christmas dinner and Thanksgiving dinners , and I feel bad for breaking it as I have always done the tradition meals with my family ,after talking to all of my household family we took a vote , shrimp boil and steaks won two things everyone loves in my house but only get a few times a year . So with it being 🥶to do a real shrimp boil I came across this one for the oven. Heres to new Family Traditions . ( can be made any time of the year, I just like to do backstories on my recipes, gives them more meaning.) I must say from asking for ideas from my favorite recipe group I didn’t feel bad anymore, turns out a lot of people do this and even keep it more simple with just finger foods they can snack on all day, don’t be scared to step out of the box lol 😂 not to mention iam actually saving more money....
