  6. 3 Tbsp white wine vinegar
  7. 3 medium celery stalks (finely chopped, approx 1cup)
  8. 3/4 cup mayonnaise
  9. 3 Tbsp fresh basil (chopped)
  10. 1 Tbsp fresh dill (chopped)
  11. 1 tsp black pepper

Bring 2qt water to a boil in a large saucepan over medium-high heat. Stir in 2 Tbsp salt and stir until dissolved

Cut corn off cob. Discard cob.

Add corn and potatoes to mixture. Stir to combine. Lightly smash mixture together until creamy

Cover and chill at least 1 hour and up to 3 days.
