Peel the potatoes and cut into about 8 pieces, and place in a bowl of water. Drain off the water, put the potatoes into a heatproof container and cover loosely with plastic wrap. Microwave for 3 minutes or so at 500 W. Mash while still hot and leave to cool.

Slice the cucumber very thinly, sprinkle with a little salt and massage, and squeeze them out well to get rid of any excess moisture. Boil the sausage and slice into rounds. Defrost the corn - it's easy if you just add it to the boiling water after taking out the sausage. Drain well.
