Benny's Corned Beef Sandwich Batch 3

You can say it's from tin or a can to me it's the same. When I was young around 4-1/2 to almost 5 years old my late granny had a boyfriend who worked cooking for logging camps. So when I got to go to my grannys house and he was there he would cook up some types of food. One of my favorite ones was eggs with Heinz 57 steak sauce or HP steak sauce. The yolks would be runny the whites done. It set it on a plate and give me buttered toast with a bottle of steak sauce, sometimes with sausage or bacon. I have that recipe on here too. Except the yolk aren't runny. It's called a sandwich full of memories. On a couple of occasions Benny would cook tinned or canned corn beef. He fried it crispy. Added to a bowl add some Heinz 57 steak sauce or HP steak sauce. Served it on toasted bread. Kinda like a sloppy Joe but not so sloppy. This is dedicated to him, Benny. Thank you Benny!!!

Simple Fresh Corn & Tomato Salad

Simple Fresh Corn & Tomato Salad

If your corn is exceptionally sweet, you can use the kernels raw, and you'll have an even fresher, crisper salad to enjoy in less time. But sauteing the corn does bring out a different flavor and texture, and each variation is worth trying at least once. If you're going to saute your corn, I suggest you do that first, set the corn aside in your salad bowl to cool, give it a couple of stirs or tosses to release some of the heat, and then do your knifework on the rest of the ingredients while the corn cools. And you already know I'm not such a stickler for upscale ingredients, but if you can get your hands on some sweet, flavorful heirloom tomatoes, they really do make the salad better. If you'd like to give it a slightly more complex flavor, some optional spices that would work well individually in this salad in small amounts (1/8 to 1/4 teaspoonful): cumin, chipotle, smoked paprika, coriander, or even a little curry powder.

Corn, Ham, and Mayonnaise Pancakes

I used the corn pancake recipe (which uses real corn kernels) from my favorite book, "Oishiinbo." If using an electric griddle, set it to medium heat (160Β°C). You don't need to put anything on these since they're already flavored. If you would like to eat the steamed bread right away, microwave one at a time on low for about 1 minute (steam for 2 minutes) and they will be fine, but using a steamer produces a fluffier and more delicious result. The steamed bread will still be light and airy the next day. It's similar to unsweetened cheese steamed bread. For 4 pancakes. Recipe by Ata
