This is a dish from Central Kalimantan which I got from one of my friends who migrated to Samarinda . The recipe is not that complicated though takes some time .

  11. 2 chunk ginger
  12. SAMBAL SAUCE

  14. 50 grams cayenne pepper
  15. 100 gr curly chilis
  16. 10 hazelnuts
  17. 5 shallots
  18. 2 cm piece galangal
  19. 2 cm piece turmeric
  20. 2 tsp salt
  21. 1 tsp sugar
  22. 2 Tbsp coconut milk powder
  23. 500 gr lemongrass, white part and thinly sliced
  24. VEGETABLES
  25. 50 g carrots , diced
  26. 50 grams green beans, cut into medium pieces
  27. 75 g young corn

Steps to make a Steamed Fish with Sambal (IKAN KUKUS)

Clean fish and separate head and spines (4 fillets).

Place the tuna on a flat plate. Sprinkle with lemon juice, then steam for 30 minutes. Remove and set aside.

To make the sambal: puree chili, hazelnut, onion, turmeric and sauté until fragrant. Add the sugar, salt and coconut milk powder.
