Mexican-Style Shredded Chicken
Use it for tacos, burritos, or whatever you'd like with this perfectly spiced, super tender shredded chicken. If you go with tacos, keep it simple. Garnish with diced onion, chopped Cilantro, a squirt of lime and just a few crumbles of good authentic Mexican queso cheese on top of a warm soft corn tortilla. Let the chicken shine through, it's awesome. I've got alot of pride in this recipe. It took a long, long time to get here but it's close to perfection. It freezes really well and can be reheated from frozen without much effort, so scale up the recipe and freeze it in a bunch of freezer bags so you can have it at the ready whenever you need.
My Aunt Edna's Shrimp Potato Salad
My Aunt Edna's husband likes his potato salad with some shrimp. So this is my aunts recipe. If you love seafood this one is for you! If not leave out the shrimp.
Sous Vide Steak Instant Pot IP
Trying this with steak for the first time, and it is so easy, and so much flavor gets added to the steak, and it's perfectly done. When the steak had been in for it's one hour, the wife said she was busy. It was 40 minutes later before she was ready to eat, and the steak removed from the water bath. The steak was still perfectly done even after 1 hour and 40 minutes. How convenient is that. So a quick sear later, and we had a perfect, extremely flavorful steak. It still surprises me how me how much flavor is imparted to the meat using this method. Using minced (as opposed to powdered) onion or garlic, is just perfect. Plus the extra short time to prepare the corn-on-the-cob made using the Instant Pot a win for this dinner.

Mike's Mexican Sick Day Soup
Since the rest of us were super distracted making other dishes - I charged my more advanced 8 year old culinary student with making a healthy Mexican soup for the sick ones. This is what she came up with. It was so easy - she didn't even sweat her veggies. It was just, "Everybody in the pool!" Anyway, delicious work kiddo!
