I always make extra taco meat to use in a quick recipe to be made later. I had all these ingredients on hand and just tossed it together. Its a thick soup so feel free to add xtra water or more tomato juice. So pleased with the outcome!!!! Enjoy!!!!

"Lotsa" Vegetable/Beef Soup

Been rainy, windy and chilly here today, so decided to see what I had on hand. Ended up being a pot of soup. Hard to give you exact measurements, as most everything was bits and pieces of bags and containers I had. Put everything in the crock pot for about 6 hours on low....just until the potatoes were done. Served with some corn bread......yummy!! Plus I have enough for dinner Tues, when I come home from work.

Just another family dish passed down through generations. I tweaked it a little bit when I was given the recipe by increasing the amount of okra from an original two cups because I REALLY like okra. Ha! I'm also not normally a heavy butter user, but it's used in this recipe to help create a sort of dough with the flour, corn meal and veggie juices. It is simply delicious.

I love pot pies but hate the fuss of the dough and think good pot pie "innards" don't even need it. Feel free to add any other seafood to this recipe or change it up all together and use chicken instead of seafood with all the veggies. Easy recipe to double and the leftovers are just as great!
