Elotes (Mexican Street Corn)

Elotes (Mexican Street Corn)

It was the Pixar movie "Coco" of all things that made me want to try my hand at this popular street food from Mexico. Called "Elotes" this is grilled corn on the cob shoved onto a stick and covered with delicious goodies for a salty, tangy snack! Research on traditional Elotes recipes seemed to indicate that the traditional first layer of coating is Mayo but believe it or not, I am not a huge fan of Mayo so in this version, I swapped out half of the Mayo for sour cream and the result was delicious!

Some recipes I seen calls to bake the biscuits on top of the filling in the oven, but honestly the bottom of the biscuits are like dough, it’s why I cook them separate . If your not taking pictures of your food like I tend to do lol there’s really no reason for the baking dish , just serve it up...

Tex-Mex Shepherd's Pie

We had a craving for shepherd's pie, but also wanted to shake things up with it for some added pizzazz. This was the result. Although the recipe I'm sharing is including a few extra things that I will be doing next time, as I think they will improve it a little bit. We didn't do the thickening of the sauce, and only used 2 pkgs. of taco seasoning this go round, but still came out yummy, but gonna add a third pkg. to it next time and thicken the sauce a bit, as well as add more cheese and brown the top of the taters!!! 😆😆😆

Crispy Fish Sausage and Corn Gyoza

Crispy Fish Sausage and Corn Gyoza

My children love gyoza. I only had one fish sausage, and I thought about just cutting it up and wrapping it into the gyoza, but then I would end up with leftover gyoza skins, and it was a bit difficult to wrap... So I thought that I would mix it together in a blender with onions to make a paste, and I was able to make tons of gyoza. I use one 85 g fish sausage. You can put the fish sausage and onions into a blender to turn it into a paste. Recipe by Dokintan

Pan Fried Corn Pone my version

Pan Fried Corn Pone my version

Everyone in the South, Central areas of America, and various other places, have their version. The origin is from Native Americans. They originally made thick batters and formed it in their hands. Then they would deep fry in animal fat, steam in green corn husk, or boil them. Some even cooked them dry and hard for trips to take and eat. There is many versions of this some use hot water mixed with the dough, buttermilk, milk, or any numerous ways and ingredients. This is why I call this my version. I have 3 options in the method of cooking this one is nonstick spray, fry in oil, and a very large diameter cake. I just hope if you give it a try that you enjoy!! I am very thankful for the Native American People for their contributions that they hardly get credit for. They even invented popcorn!!!
