Woohoo! Popcorn! Who doesn’t love popcorn?! Popcorn is a perfect quick and easy snack! Firstly though, if you buy popcorn instead of make it at home... NEVER BUY BOY SCOUT POPCORN!!! It’s cheap junk. I buy Popsecret homestyle popcorn for when I’m feeling lazy and don’t want to make it. But give it a go and try it homemade! (My cat, Quora loved it)

Pochero (Beef Stewpot)

Pochero (Beef Stewpot)

Majority of the time I spent on slowly cooking the beef on medium heat to make it really . The rest will just take about 12-20 minutes max. With the Spanish influence in the Philippines, we have our own version of Pochero using local and easily available ingredients. The basic component of a Pochero is a tender beef stew with some green leafy veges. Many households add in thier favorite vegetable like chick peas, squash and cabages. Some even ad sausages (chorizo) to their soup. Pochero soup are not limited to beef, it could be pork or chiken or mix. Pochero is the soup that everyone can enjoy.

Sweet and Sour Pork

This is an old recipe of mine for sweet and sour pork that I updated by stir frying the pork instead of battering and deep frying it. It makes it a quick one pan meal and we liked the fresher taste of the pork. Chicken and shrimp can be used as well.

Mike's BBQ Chicken & BBQ Pulled Pork Sandwiches + Sides

Mike's BBQ Chicken & BBQ Pulled Pork Sandwiches + Sides

It was literally a BBQ Bonanza this 4th of July holiday at my house folks! Pool side even! My incredibly ambitious students made BBQ Chicken Sandwiches, BBQ Pulled Pork Sandwiches, BBQ Baby Back Ribs and BBQ Baked Beans! All served with chilly Cole Slaw, sweet buttery Corn On The Cob, fresh garden salads, fresh garnishments and fresh fruits! Man! Talk about a sticky little weekend! I'm sure any one of you parents out there can imagine how big of a mess 15 tiny little students can make with fresh fruits, sugary sodas and 4 large bottles of Sweet Baby Ray's BBQ Sauce huh? 😒 Jeeze! I'm still cleaning it all up! [so are the ants] Anyway, since there were too many recipes to post - I had them list the easiest and the tastiest of those presented. I'll post their recipe for the Copy Cat KFC Cole Slaw and BBQ Ribs on a separate post. Know all photos and instructions were taken and posted by my 7 and 8 year old talented icky - yicky - sticky lil' culinary monsters! Excellent job kiddos! Mom's, dad's, siblings, guests and teacher were ALL so very impressed!

Cornbread with kimchi and cheddar

Okay, so I followed a recipe to make homemade kimchi, but it was too salty (didn't rinse oops), and I'm doubting its safety. Therefore, I thought I'd incorporate it into baking! Kind of like replacing the jalapenos with something more fun.
