Stelly's beef and veg in plum sauce

Stelly's beef and veg in plum sauce

My wife and I are lucky that our daughter's not a super-picky eater. She has her faves like any kid, but is pretty good for the most part. Even so, the true sign that something I've cooked is a success is if, during mealtime, she reaches over and grabs something off Mommy or Daddy's plate. And she did that a lot with this dish. Funnily, neither Mommy nor Daddy thought the dish was all that spectacular. Honestly, I'm inclined to jazz it up with a little chili and maybe some ginger and a sprinkle of cilantro. Or a bit of orange zest. Or a squeeze of lime. But I'll resist and put it on record as is, so that I can make it again just the way my little girl likes it.

Corn Custard

Corn Custard

I found this recipe online about 10 years ago. Ever since then I have made this part of my holiday meals. It's also great for a cold night. This batch is done with improvising. I didn't have creamed corn, but I did have frozen corn. So this pictured batch is as follows: 1 cup butter 1 bag of frozen corn 1 can of cream of celery soup 1 cup of milk 2 eggs 1 box of Jiffy cornbread mix And guess what? It worked!!

This is the most basic and easy cornbread recipe I know. I am often out of milk and eggs, but want some cornbread. Being a hillbilly, there is no place for sugar in my cornbread! I looked online for some simple recipes, but everyone wanted to make things complicated. I like to keep it simple. This may not be the tastiest cornbread recipe, but It is probably the easiest you will find.

Chili con carne

Chili con carne

There are a lot of great things about my city, but access to southwestern ingredients isn't one of them. Especially in our suburb, where it's easier to find a half-dozen different blends of Chinese 5-spice than it is to find 1 ancho chili. That's where this recipe comes in. If you don't already have everything you need to make it in your pantry, you can probably pick it up at your local supermarket. Perfect for when you feel like cooking up a tasty pot of chili.

Corn Rice with the Silky Strings

I found out that the silky strings that you get inside corn on the cob are good for reducing bloating so now I always add them when making rice with corn. Please adjust the amount of salt to your taste. The kombu is optional, just add it if you want to - The corncob will help add more flavour to the rice so please make sure to add it in too. You can use fresh corn or boiled corn for this recipe, it's up to you. Recipe by Yuripomu
