Baked Croquettes with Bacon, Corn & Cheese

My parents sent me a lot of potatoes, so I made potato croquettes imitating TANITA restaurant's baked kabocha squash croquettes recipe. (TANITA a company that makes body scales and other scales, is also famous for providing healthy lunch menus in office cafeterias.) * In Step 5, when you cut the cheese, be careful not to pull on the knife, otherwise it will cut right through through the plastic wrapper. * I am using a 1000W toaster oven., just as a reference point. * The cheese and the bacon add enough salty flavor. I am a huge fan of crawfish boils and have attended many...MANY...in my time in the South. I am happy to share what I consider the best recipe/process I’ve witnessed and now make myself in crawfish season from April-July. (Adjust ingredients according to the amount of CRAWFISH eaters...those who don’t care for crawfish but still attend your boil will eat all the sausage corn and potatoes!!! 😡) Oh, and don’t forget to smear the garlic on the potatoes with a squeeze of lemon or orange!! Yummmm!!

Most aren't aware that authentic Tortilla Soup was once pretty much that, tortillas & chicken broth. Amenities such as veggies and spices were affordable to few migrants so only the basics were served. Well, they've come a LONG way baby! Today, it's commonplace to find chicken, chiles, cheeses, onions, herbs, garlic, celery & carrots in this festive dish!
