Sweet Corn Soup

Sweet Corn Soup

This is one of my absolute favorite ways to cook fresh sweet corn! It's so simple and really takes advantage of the corn's natural sweetness. Last summer I think almost of all of the corn I bought ended up being turned into this soup! If you use old corn or some that has dried out a little (wrinkly kernels), it won't turn out very good so I highly recommend using very fresh, in-season corn with plump kernels.

I'm native american, grew up on a rez - this is a favorite dinner staple. My sister's the queen of soups, so with her tutelage, I made a pot by myself ❤ Idk if you've ever seen the joke/meme about Natives or Mexicans not using exact measurements, but that's exactly what this entails. You measure with your heart/soul y'all. (Except the pasta in this case.)

I found this recipe online about 10 years ago. Ever since then I have made this part of my holiday meals. It's also great for a cold night. This batch is done with improvising. I didn't have creamed corn, but I did have frozen corn. So this pictured batch is as follows: 1 cup butter 1 bag of frozen corn 1 can of cream of celery soup 1 cup of milk 2 eggs 1 box of Jiffy cornbread mix And guess what? It worked!!

This is the first time I ever tried making this one though, and the gravy recipe is entirely my own.
