Several years ago our family was in Branson, MO and went to Silver Dollar City amusement park. This them park is based on old times in the Ozark Mountains. At one concession spot they featured succotash being made in this 8-10 ft wok as a worker used a large shovel tool to "stir fry" it. The colors were so vibrant and the taste was fantastic.   1. 12 oz Frozen Lima Beans
  2. 12 oz Frozen Corn
  3. 2 strips bacon
  4. 1/2 Onion chopped
  5. 1 Red Bell Pepper (chopped)
  6. Handful fresh Green Beans (cut in 1 inch strips)
  7. 3 tbsp Butter
  8. Salt
  9. Pepper

Steps to make a Skillet Succotash

Cut bacon in 1 inch strips. Place in wok or skillet over high heat on stove. Render all the oil from bacon.

Add onions, red bell pepper, and green beans to the rendered bacon. Stir continuously over high heat.

After a couple of minutes of stirring, add the frozen corn and frozen Lima beans. Add butter after a couple of more minutes.

You want all the vegetables to be hot and done, but not overdone. Crisp is better than limp vegetables.
