Cheesy Chorizo Rice

Cheesy Chorizo Rice

Ninja Foodi dinner, but would work the same with most any pressure cooker. What I like about this recipe is it was quick, easy, filling, inexpensive, and made a whole meal with just one pot. This was a total experiment. I ended up just tossing together some things I'the hoped would work and figured pizza is always just a phone call away if I failed. 😂 My husband loved this, so I made sure to record it to be able to recreate it for him. That being said, this is not by any means how a traditional chorizo dish would be prepared, and I apologize in advance to any Mexican food connoisseurs out there. You will more likely than not want to add some jalepeños and/or red pepper flakes and cayenne to turn up the heat if that's your thing. This should also work just fine with ground beef instead of chorizo (double the spices), Rotel tomatoes instead of Italian tomatoes (likely would work better), condensed cheddar soup or your own cheese sauce from shredded cheddar butter and milk melted together instead of the Ragu cheese sauce, black beans instead of blàckeye peas, brown rice instead of white rice. ....or just use it as a base to spark ideas for your own experiment with whatever you have on hand.

Prawns and chorizo on polenta

Prawns and chorizo on polenta

This is a variation on a Spanish tapa, served atop cheesy polenta. Poaching the prawns in oil isn't necessary (you can throw them into the pan at step 4) but doing so almost guarantees they come out perfectly plump.

Elotes (Mexican Street Corn)

Elotes (Mexican Street Corn)

It was the Pixar movie "Coco" of all things that made me want to try my hand at this popular street food from Mexico. Called "Elotes" this is grilled corn on the cob shoved onto a stick and covered with delicious goodies for a salty, tangy snack! Research on traditional Elotes recipes seemed to indicate that the traditional first layer of coating is Mayo but believe it or not, I am not a huge fan of Mayo so in this version, I swapped out half of the Mayo for sour cream and the result was delicious!

Fårikål, Norwegian Lamb and Cabbage

Fårikål, Norwegian Lamb and Cabbage

This recipe originates from Southern Norway. Next time I will try to remember to put the pepper corns in a sachet. Not everyone likes pepper corns. Nevertheless a very superb dish. Rich, filling, and the lamb oh,so tender. Usually in Norwegian homes it's served with potatoes.

Cheesy Parmesan Corn Meal Mush

Cheesy Parmesan Corn Meal Mush

Corn meal mush is a very versatile dish that is popular primarily in the Southern United States. It works a lot like polenta in that it can be served fresh and soft, or it can be chilled, sliced, and fried. The main difference between "mush" and polenta is the corn meal used for mush is not as finely ground as that used for polenta, and in the US when corn meal Mush is served it's usually used as a breakfast food and sweetened. I like using it more as a savory side and this is what we have in this simple recipe.

Make Corn Soup-Flavored Okara Cookies in the Microwave

Make Corn Soup-Flavored Okara Cookies in the Microwave

I originally posted this recipe as a microwave variation for "Easy Okara Cookies - No Tools Needed". Since it doesn't use sugar and the amounts are different, COOKPAD asked me to make it a separate recipe. Our microwave oven is small, so I use a small (18 x 25 cm) plastic bag. If you use a larger bag you can roll the dough out thinner and it may bake faster, maybe? Take out the ones that have browned and just keep microwaving the soft ones, or flip them over to make them all crunchy. Recipe by Nekozame
