In a small non stick pan heat a tbspn of ghee over medium heat

Toss in the cashews and raisins and fry until brown and keep aside

Next add the onions in the same pan and fry until caramelised and keep aside

In a wok add the remaining ghee and let it heat

Add the Bay leaf, dry red chilli,cumin seeds, cinnamon, cardamom pods, star anise, ginger garlic paste, cloves and sauté for 2 minutes until you get a sweet aroma

Next add the boiled peas and corn and mix well and sauté for another 5 minutes covered

Now add the rice, salt and garam masala and cook covered after mixing well for 10 minutes

Take off the heat and serve garnished with caramelised onions, cashews and raisins
