lightly coat one side of each tortilla with cooking spray. on uncoated side of 2 tortillas, divide half of cheese. top each half with sweet pepper mix, tomato slices, cilantro, remaining cheese. then remaining tortillas, coated sides up.

cook quesodillas, in same skillet, over med-high heat for 4-5mins per side, until cheese is melted & tortillas are lightly brow. cut & serve with sour cream & lime wedges
