I was trying to make a whoopie pie here lol. That was the experiment but although these are soft cookies and look like whoopies they're not quite spongy enough. Another experiment for another day lol! Great flavour and I'm still happy with how they came out

Vegetarian Doria Using Leftover Veggies

This recipe is the result of my attempt to make something warm and delicious with cold brown rice and leftover veggies in the fridge. Using boiled potato or penne pasta instead of rice will turn this into a gratin. Any vegetables you like are fine, but onions will add sweetness and make it delicious. They're even better if you fry them until they are a well-browned, amber colour. If you are using eggplants, they taste best if you steam them first. The photo is of a winter vegetable version. Curried Gyoza Dumplings

Curried Gyoza Dumplings

The garlic and garlic chives in store-bought gyoza tend to be too strong to pack in your bento. So, I made a homemade version that cuts down on the smell and could be packed in your bento without concern. At Step 4 when you flip the seams down, they scorch easily so be careful. If you prepare the dumplings to Step 3 in the evening, you only need to fry them the next day. The seasoning for the filling is slightly concentrated. You could make a large batch and freeze them. Coleslaw: Sesame and Mustard Flavour

Moisture tends to be released when making coleslaw, so when packing it into my bento lunchbox, I added ground sesame seeds to absorb the moisture. I forgot to add the sweet corns for the photo, since I took the photo after making it during a busy morning. If you don't have white wine vinegar, use rice vinegar instead. Adjust the amount of the seasonings to your liking. Recipe by Iriko
