It’s there on the menu in almost all Indian restaurants. It's called Kadahi paneer as it's cooked in a heavy iron or brass Kadahi/wok. But nowadays you can make it in a pan. The main flavour of my recipe comes from a special ground kadahi masala and tadka.
Ingredients and spices that need to be prepared to make Kadahi Paneer:
- For Kadahi masala-
- 1 Tb coriander seeds
- 2-3 dry whole red chillies
- 1 tsp jeera / cumin
- 1 tsp saunf/fennel
- 3-4 cloves/laung
- 2 green cardamom
- 5-6 black pepper corns
- For Kadahi gravy-
- 2 Tbsp+ 1 Tbsp ghee+oil
- 1 tsp fenugreek/ methi seeds
- 1 small onion finely chopped
- 2 medium tomatoes chopped
- 2 Tb tomato puree
- 1 inch ginger chopped in jullienes
- 1/4 tsp turmeric
- 1 tsp Kashmiri red chilli powder
- to taste Salt
- Other ingredients-
- 1 medium onion chopped into dices/cubes
- 1 large green capsicum chopped into dices
- 500 g malai paneer chopped into 1 inch dices
- 1 Tb kasuri methi
- 1 tsp garam masala
- as required Green coriander for garnishing
