In a pan, heat the oil and add the chopped onion and garlic. Sauté and add the finely chopped capsicum and bell peppers. Add the corn and cook till almost done.

Add salt, pizza and schezwan sauce. The mixed herbs and chilli flakes are added now and stirred well. Add half of the grated Mozzarella and mix all the veggies well. Remove from heat and let cool.

Punch the Puris in the centre and fill them with the corn stuffing. Place an olive each on the Puris (optional) to give an authentic Italian touch. Sprinkle the rest of the mozzarella cheese over them. To get a real crispy and warm taste bake these stuffed Pani Puri Shots in a preheated oven for 5 minutes or till the cheese melts. You can even micro it for 10 seconds on high temp. Remove from the oven and serve hot. Drizzle with the Tomato, hot and sweet sauce if you like to.
