Cajun Inspired Spicy Buttered Crawfish Boil with Sausage and Corn

Cajun Inspired Spicy Buttered Crawfish Boil with Sausage and Corn

I can't resist live crawfish when it's in season. The sweet body meat, the even yummier headfat, the communal dining experience of a crawfish boil... so good! Crusty bread is a must to sop up all the delicious sauce. I call this a boil, but I actually do something closer to steaming - helps everything retain more flavor instead of getting diluted by a bunch of water. If you're using live crawfish, you'll want to give them a few good soaks and rinses in fresh water to remove the internal and external debris. See Step 1 for instructions. #seafood

Maque Choux (pronounced mock-shoe)

This is a throwback to my Cajun upbringing. My mom is from southern Louisiana, a town called Church Point. Deep in Cajun territory. This is a very old recipe and something I ate often. I’m making it this year for our Thanksgiving dinner and wondering why we haven’t done it sooner. We always wait all year for rice dressing but maque shoux kinda got shoved to the back. I’m bringin’ it back!!!! It’s so worth trying and goes very well with my smothered chicken recipe. This recipe is for a crowd. You can make much less if necessary. #mycookbook

Mason-Dixon Cornbread

Mason-Dixon Cornbread

So I wrote my own out after trying a few different recipes, I wanted something middle of the road between a crusty not sweet southern cornbread and the Yankee "cake" cornbread. I wanted mine to be able to stand on its own, but also go good with other things. Not so sweet that it's out of place with chili, but not too savory to eat with milk and honey butter for breakfast. This recipe has been adapted to accommodate aiden's gluten intolerance, just follow what I marked.

I love cordon Bleu but I don't like frying it, so I came up with a baked recipe and without ham because honestly I like it better that way but you can add it if you want.
