  2. 10 Kashmiri chillies
  3. 2 tbsp coriander seeds
  4. 2 tsp Urad dhal
  5. 1/2 tsp fenugreek seeds
  6. 1 tsp cumin seeds
  7. 6 pepper corns
  8. 1 cup Scraped coconut
  9. 1 lime size Jaggery
  10. 1 Tamarind Gooseberry size (soak in warm water)
  11. 1 cup Thoor dhal
  12. 1 tsp Turmeric powder
  13. 1 Carrot
  14. 1 Manglore cucumber
  15. to taste Salt
  16. For tempering:
  17. 1 tsp Mustard seed
  18. little Hing
  19. 15 Curry leaves
  20. 4 dry red chillies

Steps to make a Udupi sambar

Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.

Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste

In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.

Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour

Every year in the summertime, we receive a lot of corn as gifts from acquaintances. But I'm not very fond of the texture of the corn kernels, so I always end up making corn potage soup with it. When corn is not in season, I use store bought corn paste instead of fresh corn, but the intensity of the color, flavor, and sweetness is just not the same!! Use corn as soon as possible after picking. Any more than 3 days after harvest, and the flavor is not so good anymore. What we do at my house is to at boil all the fresh corn cobs, wrap them in plastic wrap and put them in the refrigerator. Alternatively you can remove the kernels and freeze. It turned cold here in Florida. Soup and chili time. You have white chili, and red chili, here is my brown chili yes it has beans and pasta. The pasta is Orecchiette which translates to little ears.
