Mini Corn Pizza (Pizza With Corn Base)

Mini Corn Pizza (Pizza With Corn Base)

#mysterybox2 Mini Corn Pizza is a fusion dish. These pizzas are made using sweet corn to prepare the base and our regular bell pepper and onion topping. For the pizza sauce, a mixture of some ketchup and chilli sauces has been used, though you can surely try using pesto or any other sauces of choice, like for instance, you can just mix up some barbeque sauce with the ketchup too! The ingredients used in this dish, like sweet corn, bell peppers, onions are all nutritious and you can go ahead and add any other veggies or even some meat as per choice. The base itself turned out very delicious, and the addition of the vegetable topping, pizza seasoning and cheese made the pizza totally mouthwatering!

Creamy Corn Toasts

Creamy Corn Toasts

#mysterybox2 Creamy Corn Toasts is a delicious breakfast dish which can even double up as an evening snack or even as a light dinner. Just as the name suggests, the overall taste is creamy and when teamed with whole wheat bread, it becomes healthy too! Sweet corn has a number of health benefits and it’s sweet taste imparts a wonderful flavour to the dishes in which it is used! In this recipe, I have ground 2/3 rd of the boiled corn to make it creamy and teamed it with some white sauce. The rest of the corn has been kept whole for the added crunch! The cheddar and pizza cheese just adds up to the overall taste and makes this dish quite filling too!

Japanese Omelette with Okonomiyaki Sauce (お好み焼きオムレツ)

Japanese Omelette with Okonomiyaki Sauce (お好み焼きオムレツ)

おはよう友達 ! That means good morning friends in Japanese. I (Gianni) am currently fully embracing my inner otaku by learning to speak, read and write in Japanese. This recipe is an homage to the Japanese “omeretsu” which is actually an homage to the standard American omelette. Inception, or should I say omelette-ception. I’ll stop. This recipe is also the first installment of a segment I like to call: Gourmet Versions of Things I Saw My Roommates Cook in College This one is inspired by my former roommate and one of my best friends, Caleb Rittler. In college, I watched Cal make the same breakfast every day. A two egg omelette. Pretty standard. He would then slather/glaze the omelette in a thick layer of ketchup. Disgusting, I know. But then again, I’ve never really been a ketchup and eggs person… Or so I thought… Flash forward a few years and I’m getting bored with standard breakfast fare and trying to find some more creative recipes to break the fast. I stumble upon a video of a Japanese chef effortlessly whipping up a beautifully fluffy omelette over fried rice and drizzling it with a dark, savory sauce. I had to try it! The creamy, custard like omelette, the nutty toasted fried rice, the tangy, umami-packed okonomiyaki sauce. Cal, if you’re reading this, おはよう友達 which means I am deeply, and respectfully sorry. I will no longer be a ketchup on eggs hater, but I will try to make it a little more “extra.”

Blackened Corn and Shrimp Salad

Blackened Corn and Shrimp Salad

I find this salad perfect for late summer or early fall. A loose play on esquites, this dish comes together quickly and looks far more complicated than it is. Omit the shrimp, and you can serve this as a tasty vegetarian side dish. You can play around with the spices and ingredients depending on what you have-- cilantro for basil, feta instead of Cojita cheese, etc, but this is how my family likes it best. I've served it here with a roasted summer squash soup and sliced honeydew melon topped with chili powder.

Corn, Ham, and Mayonnaise Pancakes

Corn, Ham, and Mayonnaise Pancakes

I used the corn pancake recipe (which uses real corn kernels) from my favorite book, "Oishiinbo." If using an electric griddle, set it to medium heat (160°C). You don't need to put anything on these since they're already flavored. If you would like to eat the steamed bread right away, microwave one at a time on low for about 1 minute (steam for 2 minutes) and they will be fine, but using a steamer produces a fluffier and more delicious result. The steamed bread will still be light and airy the next day. It's similar to unsweetened cheese steamed bread. For 4 pancakes. Recipe by Ata
