  12. (1) Tsp Chipotle Pepper Seasoning
  13. (1/2) Tsp Ground Cumin
  14. (1 1/2) Tbsp Chili Powder
  15. Salt and Pepper
  16. (8 Oz) Dry Large Elbow Noodles
  17. Water To Boil Noodles
  18. (3) Cup Cheddar Cheese, Grated

Steps to make a Cheesey Chili Mac

Start by boiling noodles

Sauté onions and Garlic in oil in a skillet. Add hamburger, fry until brown. Drain grease.

Add the seasonings, salt and pepper to taste, 1/2 cup water, Adobe chili, tomato paste,stir well. Medium low heat.

Add diced tomatoes, tomato sauce, kidney beans, diced green chilies and corn, cover and simmer low heat 20 minutes.

Drain elbow noodles.

Add meat mixture to elbow noodles, 1 cup of the cheese and stir well.

Add Chili Mac to a large, greased baking dish.

Cover with the remaining cheese.

I was craving a fish taco so I made this low fat version. It would be better with corn tortillas but I only had whole wheat flour tortillas. It uses frozen corn that you broil in the oven to mimic grilled corn. And healthy sautéed veggies in water. No oil is used except to grease the baking dish. I also used dried Sumac instead of lemon juice. Sumac has a sour taste and I don’t tolerate citrus well. Turned out really good. The fish was flavorful and not dry.
